The scenario, stated precisely
The traveller intends a stay of several weeks, beginning in Quito and ending overland in Peru or Colombia. No return flight exists. Accommodation is booked for the first three nights only. Funds are held on a card.
Two facts define the risk. First, the itinerary has no departure from Ecuador that an agent can verify. Second, the planned exit is by road, which no airline desk can check against a reservation. Whether an authority in Ecuador would ask for onward proof at the border is a matter for that authority, and this file does not assert a particular rule. Checkpoint one: the airline desk at departure

What the agent will look for
- A passenger name identical to the passport.
- A departure from Ecuador, or a clearly onward routing.
- A date consistent with the declared length of stay.
- A record that is live in the airline's system on the day.
Checkpoint two: the arrival desk
The second checkpoint is the immigration counter at Quito or Guayaquil. Officers generally exercise discretion, and the questions vary. The applicant should be prepared to state the purpose of the visit, the length of stay and the planned departure, and to show supporting documents on request.
The overland exit complicates matters. A traveller who says "by bus to Peru" has no ticket to show. A short written itinerary, listing the intended cities in order, closes that gap without inventing bookings that do not exist.
